I have a major sweet tooth and finding substitutions that are still satisfying but also on the Fodmap safe side has been a challenge. Unfortunately even the lactose free ice creams sold at grocery stores have corn syrup, gums, and other ingredients that are high in fodmaps. Plus some of those pints can be so expensive. This recipe is double the quantity and quality of a store bought purchase (if I do say so myself!).

Chunky Monkey Vegan Ice CreamPrint Recipe
In a large bowl, add coconut milk, bananas, vanilla extract & maple syrup.
Using an immersion blender (or a blender) blend all of the ingredients before pouring into ice cream maker.
Churn in ice cream maker for roughly 25 minutes.
Add chopped nuts and chocolate chips for an additional few minutes.
Pour ice cream mixture into freezer safe container.
