Strawberry Whipped Cream Pretzel Trifle

I made this dessert for our housewarming party and it was a HUGE hit.  I was actually shocked to find that so many people loved it and they had NO idea it was dairy free.  This isn’t exactly a healthy summer dessert but sometimes you just need a good splurge right?!  Plus there are much more unhealthier options. 🙂

  • 1 Cup plus 2 Tablespoons Granulated Sugar, divided
  • 1 Tablespoon Vanilla Extract
  • 2 8 Oz. Cans of Coconut Whipped Cream

Instructions

1

Add pretzels in batches in a food processor and blend until crumbly. Pour pretzel crumbs in a large bowl and add the butter and 1 tablespoon sugar. Mix with a fork, pressing sugar and butter into pretzel crumbs. Set aside.

2

In a medium size bowl, add strawberries and 1 tablespoon sugar. Mix well to coat and set aside.

In an electric mixer combine the cream cheese, 1 cup sugar and vanilla on medium speed until mixture becomes light and fluffy. Add whipped topping and mix until combined.

Yum! I like the idea of combining the coconut whipped cream with the vegan cream cheese…makes it thicker. What a pretty dessert.

YES! It did make it thicker, it also made it less “coconuty” for the people that aren’t huge fans of coconut.
