Traditional Greek Salad in Santorini, totally safe on your IBS diet plan.

Looking back at our honeymoon pictures from last summer brings so many wonderful memories.  I think Santorini is one of the most picturesque places in the world.  Every picture we took looked like a postcard.  I have never tasted a tomato or cucumber until I had them in Greece.  The flavor is out of this world.  I asked the locals why that is and they believe it’s from the breeze of the sea water which gives the tomatoes and cucumbers so much flavor.

Our friends recently took a big trip to Greece and did a cooking class in Athens which I would have LOVED to do.  Lucky for me, they brought over their recipes and we recreated some of these classic Grecian dishes.

Traditional Greek Salad

Serves: 4

Ingredients

  • 4 Tomatoes, diced
  • 1 Cucumber, peeled & diced
  • 1 Green Pepper, diced
  • 4 Tablespoons Extra Virgin Olive Oil
  • Oregano, Dried or Fresh, season to taste
  • Kosher Salt, season to taste
  • Feta Cheese (or nondairy cheese), cut into chunks

Instructions

Place all of the ingredients in a large bowl and gently mix well.
