I have been so into green beans lately as it’s easy to prepare, cook and get on the table in no time at all. I used to HATE green beans but that was only because I grew up on the canned slimy green beans. Just thinking about canned green beans can turn my stomach inside out. I have never been able to understand the Thanksgiving green bean casserole crazy, let alone be able to make one. FODMAP vegetables can seem limited but there really are some great options like green beans, eggplant, carrots, cucumbers, lettuce to name a few. Tomatoes which are technically a fruit (I really can’t get on board with this but I’ll follow the rules) are also FODMAP safe and depending on the type of tomato will depend on the portion amount. For this recipe, I use cherry tomatoes and a low FODMAP serving is 5 cherries. You can eat up to 16 cherries and be moderate FODMAP safe due to the Fructan.

Description

A super easy FODMAP side dish to throw together in a matter of minutes. 


Ingredients

Scale
  • 1 Pound of green beans, trimmed & washed
  • 1 small container of cherry tomatoes, washed
  • A drizzle of olive oil
  • Pinch of sea salt

Instructions

  1. In a large pan heat a drizzle of olive oil on medium.
  2. Add the green beans, tomatoes and pinch of salt to the pan.  Occasionally sauteing for about 8-10 minutes until tomatoes have softened and green beans have been cooked to your desired texture.
  3. Serve hot & enjoy!
