I’m always looking for a FODMAP breakfast recipe that is easy to grab and go.  Actually, it’s less grab and go and more grab and eat as I eat breakfast as I’m breastfeeding.  I’m all about multitasking these days as time is precious with a newborn!  What is great about these muffin cups is you can make them ahead of time and eat them throughout the week or double the recipe and keep some handy in the freezer.  I sometimes will add a little peanut butter on the top for more protein.

Banana Oat Muffin Cups

Description

These oat muffin cups make for a super easy grab and go breakfast option!


Ingredients

Scale
  • 2 cups gluten-free oats
  • 1 tbsp ground cinnamon
  • 1/4 tsp salt
  • 2 tbsp ground flax seed
  • 1 large mashed banana
  • 2/3 cup FODMAP safe milk
  • 2 large eggs
  • 2 tbsp melted coconut oil
  • 1/4 cup pure maple syrup
  • 1 tsp pure vanilla extract
  • 1/3 cup almond slivers 
  • Non stick cooking spray

Instructions

  1. Preheat the oven to 400 degrees.
  2. in a medium size bowl stir the dry ingredients together (from oats through flax seed).
  3. Mix in the remaining wet ingredients (mashed banana through the vanilla extract) to the dry ingredients, concluding with stirring in the almond slivers.
  4. Spray a muffin pan with nonstick cooking spray and fill the muffin tins with batter until 3/4 full.
  5. Bake for 20 minutes or until golden brown.

Notes

Keep the oat cups in an air tight sealed container in the refrigerator for up to a week.  These are great to keep stashed in the freezer as well!

    I just made a batch and they smell so good! I was excited because I actually had all of the ingredients in my pantry/fridge. These will be great for my high schooler who doesn’t get up in time to eat breakfast, and for me to take to work. Thanks for sharing!

      I’m so glad!! They are so simple and that’s exactly what I was hoping for – ingredients you already have! You can also keep a batch in the freezer to grab and go!
