Why are the best most flavorful dishes sometimes the most simple? This super simple low FODMAP friendly salad my brother and I created when he was grilling burgers and vegetables and we wanted a side salad with the remaining ingredients I had in the house. This was the perfect addition to have something light and refreshing to go along with a burger! I use a grocery delivery service about once a week so I try to use up what ingredients I have in the house instead of running out for one or two ingredients. Not only does this help reduce the amount of food waste but it also keeps me from going to the store every other day. This is even more important right now during the COVID pandemic as I want to limit my time out of the house. Curious to hear if you’ve changed the ways you shop since this COVID outbreak? I know I am utilizing what foods I have in my refrigerator, freezer, and pantry much, much more! Sometimes the best recipes come from a little creativity! A little olive oil, fresh herbs from my herb garden, and salt, we were good to go!

Description
A light salad made with few ingredients and full of flavor!
Ingredients
- 1 cup English cucumber, loosely chopped
- 1 cup tomatoes, loosely chopped
- 1/4 cup assortment of fresh, chopped herbs (basil, mint, parsley are recommended)
- salt & pepper, to taste
- 2 TBSP extra virgin olive oil
Instructions
- In a large bowl, mix all of the ingredients together. Serve cold or at room temperature.
