I giggle to myself whenever I think about carrots and my Grandpa Klaff. He would always remember how much I hated (and still do) cooked carrots. The cooked and mushy consistency just puts me over the edge. Whenever we would have family dinners and there was a vegetable being served, he would say “I ate it for lunch” and we all knew what that really meant. It’s funny to me the things that stick out that seem so meaningless but really bring a smile to your face. This is a delicious FODMAP side dish to make with your favorite dishes.
This particular recipe went along with an Asian themed dinner and was a perfect compliment to the meal. I know this looks like just a bowl of carrots but don’t let the simplicity fool you. There is so much flavor and texture added to it. I was thinking next time I would try adding spiralized cucumbers to it to add more color and texture. Ingredients
- 1 Bag of Shredded Carrots
- Juice from 1 Lime
- 1 Tablespoon Toasted Sesame Oil
- 1 teaspoon Gluten-Free Tamari Sauce or Soy Sauce
- 1 teaspoon Fish Sauce
- 1 teaspoon Maple Syrup
- 1 Tablespoon of chopped cilantro
Instructions
- Place the carrots in a large bowl and combine all of the ingredients.
- Mix well and let marinate in the refrigerator for at least 15 minutes.
