Breakfast Quesadilla

Description

A super filling and delicious breakfast recipe that will for sure be a hit! 


Ingredients

Scale
  • 2 eggs, whisked
  • 2 FODMAP safe flour tortillas or corn tortillas
  • 1/4 cup FODMAP safe cheese like cheddar or a dairy-free alternative
  • Breakfast Sausage, cooked & cut into 1/2 inch pieces (make sure garlic and onion free)
  • Salt and pepper, to taste
  • Nonstick cooking spray

Instructions

  1. Spray a medium size pan with nonstick cooking spray and add the whisked eggs on medium-low heat.  Cook the eggs scrambled style until fully cooked.  Remove the eggs from the pan and set aside.
  2. Add one tortilla to the pan and add the scrambled eggs, cheese, breakfast sausage, salt & pepper.  Place the second tortilla on top.  Press the quesadilla down with a spatula.  Cook for about 2-3 minutes on each side until lightly golden brown and cheese has melted.
  3. Remove and serve hot!

Notes

Feel free to add potatoes, spinach, tomatoes, etc to yours!
