I can’t go a day without eating a banana (1/2 fodmap portion at a time of course!). There has been so much buzz lately about my favorite tummy friendly fruit.  Did you know bananas are not only a great source of potassium but also moderate blood sugar levels, can help with weight loss,and contain powerful antioxidants just to name a few?!?I love the idea of being able to add these caramelized bananas to ice cream, yogurt, oatmeal, etc. which makes it a great FODMAP desserts recipes. Plus it takes under 8 minutes to prep and make.

Caramelized Bananas

A quick dessert to eat by itself or add to yogurt, oatmeal or ice cream.

Instructions

  1. Combine water, vanilla extract and maple syrup in a small bowl. Set aside.
  2. Heat coconut oil on medium-high heat in a nonstick skillet.
  3. Add banana slices and let cook for 2 minutes, until bananas start to crisp and brown. Flip over and pour in the sauce. Let boil for 30 seconds and remove from heat.
