Description

A flavorful salad with an easy lemon dressing to make in a matter of minutes!


Ingredients

SALAD:

  • 1 5 oz. bag of arugula
  • 1 orange, peeled & sliced into wheels
  • 1 grapefruit, peeled & sliced into wheels
  • 2 TBSP raw pumpkin seeds

LEMON DRESSING:

  • 3/4 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice
  • 1 tsp dijon mustard 
  • pinch of ground pepper
  • 1/2 tsp salt

Instructions

  1. In a large bowl, add the salad ingredients and set aside.
  2. In a mason jar or a container with a lid, add the dressing ingredients and shake well.
  3. Dress the salad when ready to serve.
