I have a confession to make… I probably have purchased Zoe’s chicken salad by the pint once a week for the last year. The entire staff knows me and my order as soon as I walk in the door. It is my go-to lunch during the work week as I’ll put it on FODMAP safe sourdough bread or make an easy salad with it. It’s such an easy low FODMAP lunch to have on hand in the refrigerator. I am SUPER picky when it comes to chicken salad as most are too heavy dressed, texture is weird, grapes are in it (not a fan, sorry), etc. Zoe’s chicken salad is just light and perfectly made. I have been on a mission to find a copy cat version of this salad online but have had no such luck. I told my mother in law and she was up to the challenge. We used the white meat chicken from her chicken soup recipe to make this low FODMAP lunch recipe that is pretty spot on!
Does anyone else find eating out hard on the FODMAP diet? It’s one of the top questions I get is how to safely eat out especially when you’re in an environment with colleagues. No one wants to be coined as “the difficult one” but there are easier ways to go about it. If it’s a restaurant that I’ve never been to, I’ll call ahead and find out my options. This way I have a plan before arriving of what I can order and eat. If this isn’t possible to call ahead, I will discreetly inform the waiter of my allergies. Sometimes it’s hard to do this depending on the restaurant and the people you are with so the last option being my least favorite, I will try to make an educated decision. A salad with olive oil and lemon is always a safe option, fish, sandwich on sourdough bread, side dishes like a baked potato or vegetables are also typically safe options.

Description
A copy cat version of Zoe’s chicken salad that is a great FODMAP safe lunch option!
Ingredients
- 3 cups of shredded chicken breast
- 1/4 cup diced celery
- 3/4 cup FODMAP safe mayonnaise
- 1/4 tsp salt and pepper
Instructions
- In a large mixing bowl, gently combine the shredded chicken, celery, mayonnaise, salt and pepper. Add more mayonnaise if desired and serve immediately or refrigerate until ready to serve.
Notes
Serve on your favorite FODMAP safe bread, crackers or a salad!
