A copy cat version of Zoe’s chicken salad that is a great FODMAP safe lunch option!


Ingredients

Scale
  •  3 cups of shredded chicken breast 
  • 1/4 cup diced celery
  • 3/4 cup FODMAP safe mayonnaise 
  • 1/4 tsp salt and pepper

Instructions

  1. In a large mixing bowl, gently combine the shredded chicken, celery, mayonnaise, salt and pepper.  Add more mayonnaise if desired and serve immediately or refrigerate until ready to serve.

Notes

Serve on your favorite FODMAP safe bread, crackers or a salad!
