Smashed Potatoes

An addicting side dish that compliments any meal!


Ingredients

Scale
  • 2 Pounds of Golden Potatoes
  • 1 Teaspoon Extra Virgin Olive Oil
  • Sea Salt & Pepper for taste
  • Fresh Herbs like Rosemary and Sage, optional

Instructions

  1. Preheat oven to 450 degrees.
  2. In a pot of salted, boiling water, add potatoes and cook until tender (approximately 25 minutes for 4-6 potatoes).
  3. Place potatoes on a parchment-lined baking sheet. Using a potato masher or bottom of a cup, gently smash potatoes in both directions.
  4. Add a drizzle of olive oil, salt, pepper, and herbs to each potato.
  5. Bake for 20 minutes or until golden brown on the top.
