Gluten-Free Chicken Schnitzel

gluten- free chicken schnitzel

Are you wondering what the heck schnitzel is?  Besides being a super weird sounding word originating in Austria, it’s a way of cooking thinly sliced meat (usually chicken, veal, turkey & pork) which has been breaded and than fried.   My version is more of the Israeli version as I use paprika and bread crumbs.  In Israel you can find schnitzel inside a pita with hummus, salad and french fries.  When I went to Israel in college, we definitely had some of the best schnitzel and falafel from the street.  I tend to stay away from fried foods but every once in a while it’s okay to splurge and add to your low FODMAP diet recipes.

I also thought this recipe was perfect to make during Hanukkah as traditionally you partake in eating fried foods to symbolize the oil lasting for the Israelites 8 nights instead of 1.

Description

This chicken dish will be a fan favorite in your household!

Ingredients

Scale
  • 4 chicken breasts, pounded thin
  • 2 large eggs
  • 1 cup almond flour
  • 1/2 cup FODMAP safe milk (I prefer MALK Organics unsweetened almond milk)
  • 1 tbsp paprika
  • 1 tbsp sesame seeds
  • 1 tsp salt & pepper
  • Grape seed oil for frying

Instructions

  1. In a medium size bowl soak chicken in milk for 30-60 minutes, depending on how much time you have.
  2. While the chicken is soaking, whisk the eggs in a shallow plate. Set aside.  Using another shallow plate, add the almond flour, paprika, sesame seeds, salt & pepper.
  3. Dip the chicken on both sides into the egg mixture followed by dipping into the almond flour mixture and set on a separate plate.  Continue until all the chicken pieces are covered.
  4. Using a large shallow pan starting on medium heat, add enough oil for it to be at least 1/2 inches deep.  Add the chicken breasts and cook for approximately 4 minutes on each side or until cooked through.
