There is nothing better than a good rice crispy treat!
Ingredients
Scale
- 1/2 Cup High-Quality Cocoa Powder
- 1/2 Cup Coconut Oil, melted
- 5 Tablespoons Maple Syrup
- 1 Teaspoon Pure Vanilla Extract
- 3 Tablespoons Peanut Butter or nut butter of your choice
- Pinch of Sea Salt
- 2 Cups Rice Cereal
Instructions
- In a small saucepan on low heat, melt coconut oil and cocoa powder. Add vanilla extract, sea salt, and maple syrup and stir until combined. Remove from heat.
- In a large bowl, add cereal and chocolate and mix until cereal is completely covered.
- Line a small baking dish (I used a bread pan) with parchment paper and pour in cereal mixture. Place in freezer for 20 minutes in order to harden. Cut and serve!
Notes
I keep these in the freezer as the chocolate melts pretty quickly. Be aware that vanilla extract can have added fructose like corn syrup or sugar. Make sure it is purely vanilla extract.
