Carrot Granola Cookies

I love when the seasons change and you can cozy up with a warm beverage and a comforting breakfast in the morning.  These granola carrot breakfast cookies are just that for me.  Not only are they perfect for breakfast recipes IBS but make for a great grab and go snack or even healthy dessert option.  These cookies are super easy to throw together and put in the oven in a matter of minutes.  You can be creative and add other mix ins like chocolate chips, cacao nibs, unsweetened coconut flakes, etc.  What additions would you add to this FODMAP safe breakfast cookie?

Side tangent but does anyone else think of the Cookie Crisp cereal when thinking about breakfast cookies?  I really cannot believe my parents let us eat this cereal for breakfast growing up without a fight.  The only time I remember my Dad getting annoyed was when my brother would pick out the marshmallows out of the Lucky Charms cereal and not eat the actual cereal.  HA!  Now I’m much more aware of the cereal choices I make and stick to low sugar and high fiber options.  Luckily there are a lot more healthy choices out there but you still have to read the labels.  Even the “healthy” cereal brands can be loaded with sugar and high FODMAP ingredients like molasses.

Granola Carrot Cookies

What’s better than cookie you don’t have to feel badly about eating for breakfast?!


Ingredients

Scale
  • 1 Cup Oats
  • 2 Ripe Bananas, mashed
  • 2 Teaspoons Maple Syrup
  • 1/4 Teaspoon Salt
  • 1/4 Teaspoon Ground Nutmeg
  • 1 Teaspoon Cinnamon
  • 1 Teaspoon Vanilla Extract
  • 1/4 Cup Grated Carrots
  • 2 Tablespoons Currants or Raisins

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a medium size bowl, add the oats, banana, maple syrup, and salt.
  3. Mix in the nutmeg, cinnamon, and vanilla extract.
  4. Gently fold in the carrots and currants.
  5. Refrigerate the dough for 20-30 minutes in order for the dough to harden.
  6. Using a spoon, round the dough into tablespoon size portions. Place on a parchment lined baking sheet and bake for 15 minutes.
