Description
An easy to make chicken kabob recipe that can be served alongside rice and vegetables.
Ingredients

- 2 Boneless Skinless Chicken Breasts; cut into 1/2 inch cubes
- 1 Tablespoon Extra Virgin Olive Oil
- 1 Tablespoon White Wine Vinegar
- 1/2 Lemon Juice & Zest
- 1 Tablespoon Dried Oregano
- 8 Cherry Tomatoes (4 for each skewer)
- Sea Salt & Pepper
- Wooden Skewers
Instructions
- Soak wooden skewers in water for at least 30 minutes to prevent burning.
- In a medium size bowl, marinade the chicken in olive oil, wine vinegar, oregano, & lemon juice for at least 30 minutes.
- Preheat oven to 400 degrees.
- Skewer chicken & grape tomatoes and place on a lined and sprayed baking sheet. Season generously with salt and pepper on both sides.
- Bake for 15 minutes or until cooked through. Broil for 2 minutes on both sides to add more color (be careful not to burn).
- Garnish with lemon zest if desired.
