Homemade Pesto

Growing up my parents would buy pesto from the grocery store but it was only for special occasions since the store bought jars were always so expensive.  If only I had known how EASY and inexpensive it is to make it on your own.  Now I make pesto whenever I want since I have the ingredients already on hand.  Plus it is a great way to use fresh basil before it goes bad.  It will stay fresh in the refrigerator for up to a week.

Not only is this recipe garlic-free and dairy-free which is impossible to find in the store but it has a multi-purpose use when cooking.  I use it on top of pasta, in a burger, and on fish like this salmon recipe.  Let your imagination go wild!  You can thank me later when you impress yourself and your dinner guests with this low FODMAP foods.

Description

A pesto recipe that is garlic and dairy-free but not lacking any flavor!


Ingredients

Scale
  • 2 Tablespoons Walnuts (or other nut or seed of your choice)
  • 2 Tablespoons Nutritional Yeast
  • 1 Cup Packed Basil
  • 5 Tablespoons Extra Virgin Olive Oil
  • 1/4 Teaspoon Sea Salt

Instructions

  1. In a food processor combine all of the ingredients until a paste-like consistency.

Notes

Serve over pasta, spaghetti squash, vegetables, the options are endless!
