A super simple salad recipe packed with fresh flavors!


Ingredients

Scale
  • 1 large seedless English cucumber, peeled and diced
  • 2 tomatoes, diced
  • 1 red bell pepper, diced
  • 1/4 cup of a combination of fresh parsley, basil & mint
  • 2 tbsp extra virgin olive oil
  • 1/2 lemon, juiced
  • 1/4 tsp salt

Instructions

  1. In a large bowl, add all of the ingredients and gently combine.
  2. Serve immediately or refrigerate until ready to serve.
