Low FODMAP Food - Herbed Turkey Cutlets

I’ve always been a bit indifferent about Thanksgiving turkey, I can take it or leave it.  I’m super excited to be ordering a smoked turkey from a local BBQ restaurant in town instead of having to jack with the turkey.  I’d rather concentrate on all of the delicious sides and desserts.  Please tell me that I’m not the only one?!  I’m slowly warming myself up to Thanksgiving turkey by replacing the same ole chicken breasts with turkey cutlets.  Not only is it a great change of pace from chicken but it’s an easy way to incorporate turkey in a much quicker fashion than a whole roasted turkey.  Turkey cutlets are an easy low fodmap food and make for a great recipe to add to your dinner rotation as it’s so easy to make!  Pair this with maple roasted acorn squash and roasted potatoes and you are SET!

Who else is having trouble coming to terms with the fact that Thanksgiving is only a few weeks away?!? I know I am as we are having 30 something people over…wish me luck!!!

Lemon Herb Turkey Cutlets

Description

A turkey recipe you’ll want to make all year round, not just during Thanksgiving.


Ingredients

Scale
  • 2 Thinly Sliced Turkey Cutlets
  • Salt & Pepper
  • 1 Tablespoon Olive Oil
  • 2 Tablespoons Butter
  • Fresh Herbs like Rosemary, Oregano, & Sage
  • 1/2 Cup Low Sodium Chicken Broth
  • 1/2 Lemon

Instructions

  1. Season cutlets on both sides generously with salt and pepper.
  2. In a large skillet heat oil on medium high heat. Add the cutlets and cook until cooked all the way through, about 5 minutes on each side.
  3. Remove cutlets from heat and set aside. Lower heat to medium low and add butter, broth, and herbs until butter is fully melted.
  4. Add turkey back into pan with a squeeze of half a lemon. Let simmer for an additional few minutes.
