I have a few childhood baking experiences that really stick out in my mind. One of them being after an episode of Sesame Street where the Cookie Monster was baking chocolate chip cookies. I decided I could do the same and would able to wing it without a recipe. The cookies came out of the oven completely spread out and pancake thin. It was so upsetting at the time as I couldn’t understand why they didn’t look the exact same as what was on TV. I learned a major lesson that day about the difference between of cooking and baking. Measurements really DO matter when it comes to baking! If you are looking for delicious desserts on the FODMAP diet, this is your cookie recipe!
I think it’s safe to say that my FAVORITE treat in the whole wide world is a good ole warm chocolate chip cookie. There is nothing more satisfying than a chocolate chip cookie fresh out of the oven with a glass of (dairy-free) milk. This recipe is almost more of a “breakfast” cookie due to the oat-y nature of it. Okay, maybe I’m just rationalizing more than I should but we’re all adults here! P.S. are you looking for a FODMAP safe milk that won’t hurt your tummy? I have had a horrible time finding one as even the dairy-free milk alternatives would hurt my stomach. MALK milk (the pecan and almond ones) have been such a blessing. These kinds of milk have no fillers, preservatives, cold pressed and as close as you can come to making it yourself without actually make it! Trust me, you’ll be in LOVE!

Description
A classic spin on a chocolate chip cookie!
Ingredients
- 2 1/2 Cups Oats, ground to flour
- 1 Teaspoon Baking Soda
- 1/4 Teaspoon Sea Salt plus extra for sprinkling
- 2/3 Cup Dark Brown Sugar
- 1/2 Cup Melted Coconut Oil
- 1 Egg
- 1 Teaspoon Vanilla Extract
- 1/2 Cup Dark Chocolate Chips
Instructions
- Preheat oven to 350 degrees.
- In a medium-sized bowl, combine oats, baking soda, and salt.
- In a large sized bowl, mix sugar, oil, egg and vanilla extract. Combine dry ingredients to wet ingredients and mix well.
- Add chocolate chips to batter until just combined.
- Put a tablespoon size scoop of batter on a parchment-lined baking sheet and cook for 11 minutes or until golden brown.
- Immediately sprinkle sea salt on cookies and let cool before serving (if you can wait :0).
