It is no secret that I LOVEEEEEEEEEEE cookies, specifically chocolate chip cookies.  I actually decided to start my website because of my love for cookies.  Let me explain: I have always loved to cook and especially bake.  As a little kid I would experiment with making my version of cookie recipes that I saw on Sesame Street (seriously) and quickly learned how important it is to follow measurements!  I knew I would have to get creative in finding FODMAP substitutes as I wasn’t going to stop eating the foods I love.  The first recipe I tried to recreate was a safe FODMAP diet cookie and it was a success!  It showed me I can enjoy the foods I love but without having the chronic stomach pains that come with it.    

Ever since going on the FODMAP diet and eating cleaner foods, I can’t do super sweet.  This FODMAP diet cookie recipe has the perfect amount of sweetness without being over the top.  One could say, you could probably get away with eating it for breakfast. Shhhh!

Pumpkin Chocolate Chip Cookies

Description

The BEST pumpkin chocolate chip cookies to make this season!


Ingredients

Scale
  • 2/3 cup FODMAP safe flour
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp sea salt
  • 1/4 cup coconut sugar
  • 1/4 cup brown sugar
  • 1/2 cup coconut oil, melted
  • 1 tsp pure vanilla extract
  • 2 eggs
  • 3/4 cup pumpkin puree
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a medium size bowl combine the dry ingredients  (flour through salt) and set aside.
  3. In a large size bowl whisk the melted coconut oil and sugars together.  Add in the eggs, vanilla extract and pumpkin puree.
  4. Once combined, add the dry ingredients to the wet ingredients and mix.  Gently fold in the chocolate chips.
  5. Scoop cookie dough onto a parchment lined baking sheet with space in between for the cookies to bake.  
  6. Bake for 15 minutes or until cooked through.

Notes

Store the cookies in an air tight container in the refrigerator for up to a week.
