You don’t live in Texas and not have a soft spot in your heart for fajitas. When I think about it we are a state of strong opinions when it comes to food. People are just as opinionated about the best BBQ joints as they are about the best place for fajitas. Fajitas are pretty simple: grilled meats of your choice and soft corn or flour tortillas. Who doesn’t like that?! Mexican restaurants are a popular option when it comes to celebrating birthdays with a group of friends or families. A spread of fajitas with all of the sides for the table is one of the most common and easiest ways to celebrate! I’m always the outcast having to order something different off of the menu because typically the meats are pre-marinated with garlic and onion. I recently had a MAJOR craving for fajitas and decided to try my hands at making super easy sheet pan shrimp fajitas. These were SUPER easy to make and are a must to add to your FODMAP shrimp recipes collection.
Side note: I love how delicious and FODMAP safe the Fody Foods taco seasoning is to cook with as it’s a great garlic and onion free option. It can be hard to find seasoning mixes that don’t have garlic and onion in the ingredients. What do you use for seasoning?

Description
A super easy and delicious fajita recipe for a quick dinner time meal.
Ingredients
- 1.25 pounds raw large shrimp, peeled & deveined
- 1 red bell pepper, thinly sliced horizontally
- 1 orange bell pepper, thinly sliced horizontally
- 2 tbsp extra virgin olive oil
- 1.5 tbsp Fody Foods Taco Seasoning
- 1/2 lime, juice
- Cilantro (optional)
Instructions
- Preheat the oven to 425 degrees.
- In a medium size bowl, add all of the ingredients and gently mix together.
- Spread the shrimp & vegetables on an aluminum lined baking sheet and bake for 8-10 minutes until the shrimp has been cooked through.
Notes
Serve with your favorite corn tortillas or rice.
