The easiest and most delicious curry recipe you can make in under 30 minutes!
Ingredients

- 2 cups FODMAP safe vegetables of your choice like eggplant, green beans, squash
- Drizzle of extra virgin olive oil
- 20 medium sized raw shrimp, peeled & deveined
- Casa de Sante Curry Sauce
Instructions
- Loosely chop your favorite FODMAP vegetables and set aside.
- In a large, deep pan drizzle olive oil and add the vegetables on medium heat.
- Add the curry sauce, cover the pan and lower heat to medium-low.
- Occasionally stir the vegetables and the sauce for about 6-8 minutes.
- Add the raw shrimp and cook for an additional 8 minutes with the lid still on or until the shrimp has been cooked through. If the sauce starts to thicken, add a small amount of water to thin out the sauce..
Notes
Serve with your favorite grain. I love using rice!
