Recipe confession….crock pots have previously FREAKED ME OUT! I don’t know what it is but subconsciously thinking about meat cooking for a long time is hard to process. I am trying to be open-minded as everyone raves about how amazing these gadgets are. We registered for our wedding for this one and so far I have impressed by the ease of using it and would definitely recommend. I did learn a big lesson after a messy attempt of cleaning up a crock pot queso dip, the importance of crock pot liners. Let me tell you, the ability to just pick up the liner and have little to no clean up is amazing! This soup recipe was my first attempt at a slow cooker main dish recipe and will for sure be a favorite low FODMAP foods. I was pleasantly surprised by how perfect the chicken was cooked: tender and easily shredded. I can completely understand why people use these crock pots during the weeknights for dinner, especially during the winter. What’s your favorite slow cooker recipe?

A satisfying soup recipe that you’ll love year round!
Ingredients
- 3 chicken breasts, boneless/skinless
- 2 Cups Butternut Squash, peeled, deseeded & cubed
- 1 Large Carrot, chopped
- 2 Celery Stalks, chopped
- 2 Green Onions, chopped
- 1 Can Diced Tomatoes (unseasoned with juices)
- 1.5 Cups Low Sodium Chicken or Vegetable Broth
- 1/2 Cup Dry White Wine
- 2 Bay Leaves
- 1 Teaspoon Herbs de Provence
- 1/4 Teaspoon Thyme
- 1/2 Teaspoon Sea Salt
- 1/4 Teaspoon Ground Pepper
- 1/2 Cup Italian Parsley, chopped
Instructions
- Put all ingredients minus the chicken into the crockpot.
- Submerge chicken into liquid & cover the pot.
- Cook on low for 5-6 hours or high for 4 hours. An hour before the soup is ready, shred the chicken with two forks.
- Add the shredded chicken back into the crockpot and cook for an additional hour.
- Remove bay leaves before eating. Season more if desired.
