A delicious and easy tomato side dish recipe!
Ingredients
Scale
- 2 tomatoes, cored and center scooped out
- 1 tbsp unsalted butter
- 1/4 cup gluten-free bread crumbs
- 1/2 cup of fresh herbs (I used parsley, basil & sage)
- 1 tbsp green onions, diced
- 1/4 cup FODMAP safe mozzarella cheese
- Salt and pepper, to taste
- Nonstick cooking spray
Instructions
- Preheat the oven to 375 degrees.
- In a small skillet, heat the butter on medium heat. Add the remaining stuffing ingredients and saute for 2-3 minutes.
- Scoop the stuffing evenly into the tomatoes.
- Spray a small baking dish with nonstick cooking spray and place the stuffed tomatoes.
- Bake for 25 minutes or until golden brown.
