FODMAP salad recipe - Summer Pasta Salad

Are there any better words than ‘summer’ ‘pasta’ and ‘salad’ all in one dish?! I don’t think so! I don’t know what it is but when I think about traditional Italian pasta salad, I get immediately grossed out. It’s typically overly sauced and somehow stale tasting. I wanted to create a FODMAP salad recipe that would actually take the best parts of pasta and salad to create a recipe. It’s also a great way to get your kiddos or partners to eat vegetables as the pasta is in fun shapes and the vegetables are cut up in small bites with delicious dressing all over it.

Talking about summertime, why is it that no matter what your age, there is a feeling of freedom and relaxation that comes from the extra hours of sunlight. Plans can simply revolve around the water, outdoor parties, music venues, long vacation weekends, etc. As a kid, we took our family trips during the summer months when my mom was off from school and it was slower for my dad in the office. These trips always involved leaving at the crack of dawn (or earlier) and driving 10 plus hours in my mom’s mini-van to South Padre, Texas, Memphis, Tennessee, or Destin, Florida. Looking back I can’t believe my parents were brave enough to take all three of us in a car driving straight to our destination. We would only stop to get gas and had a packed cooler with snacks and lunch. I wish my parents knew about some of these family road trip tricks that are suggested here. Now I can barely handle a 4-hour drive from Houston to Dallas without getting squirmy and uncomfortable. As my husband and I are starting a family and think about our own traditions, I look back at these family trips fondly and can’t wait to make similar memories with my family (except I think we will be flying instead of driving).

Summer Pasta Salad

Description

A super easy gluten-free pasta salad to easily feed a crowd.


Ingredients

Scale
  • 1 container of gluten-free bow tie pasta
  • 1 small orange or red bell pepper, diced
  • 1 small tomato, diced
  • 1 small zucchini, diced
  • 1/3 cup Fody Foods Garden Herb Salad Dressing
  • Salt & pepper, to taste
  • 2 tbsp fresh basil, chiffon

Instructions

  1. Set a medium size pot to a bowl and cook pasta according to instructions.  
  2. Drain pasta and pour into a large bowl.  Gently incorporate the diced vegetables, salad dressing, salt & pepper, and basil to the pasta.
  3. Serve immediately or at room temperature.
