If you’re like me, you probably haven’t heard much about teff flour. l recently was introduced to this flour by Claire Smith, a farmer whose family has been in the farming industry for 8 generations. Her family began growing and sells teff from their Michigan farm. This grain originated from Ethiopia and is naturally gluten-free & GMO-free which makes it a perfect fit for anyone following the FODMAP diet. It is a no-brainer to use this grain as a gluten-free alternative as it’s high in protein, calcium, and iron. Who knew you could make brownies with all of these positive attributes?!
