If I could scream from the roof top how much I love my air fryer I would. Not only does it make everything (well almost everything, I had a fried okra fail) perfectly but the clean-up is so easy. I have a not so secret confession, I have a weird thing about handling and cooking chicken. During both pregnancies I was unable to touch raw chicken and was very particular of what type I could eat. I think when it comes down to it, I’m afraid of undercooking it. So instead I tend to overcook which leaves the chicken dry and tough. Gross! I recently decided to make chicken exactly like I would if it was baked but instead put it in the air fryer. It turns out that low FODMAP air fryer chicken breast is ABSOLUTELY AMAZING! Just because you are using an air fryer, doesn’t mean what you make needs to be coated with a breading. Instead this recipe only uses a few ingredients and comes out perfectly moist and tender.
