Description

A classic meat sauce recipe with FODMAP safe vegetables snuck in to add more nutrients.


Ingredients

Scale
  • 1 tbsp extra virgin olive oil
  • 1 tbsp green onions, diced
  • 1 lb ground turkey
  • 1 tsp salt
  • 128 ounce can of crushed tomatoes (garlic and onion free)
  • 16 ounce can of tomato paste
  • 1.5 tsp of dried oregano
  • 1 tsp of dried basil or handful of fresh basil
  • 1/2 cup zucchini, diced
  • 1/2 cup red bell pepper, diced

Instructions

  1. In a large skillet add the olive oil and green onions and saute for a 1-2 minutes on medium heat.
  2. Add the ground turkey to the pan and brown while breaking up the meat with a spoon until cooked through (approximately 5-8 minutes).
  3. Lower heat to medium-low and add the remaining ingredients.
  4. Cover the pan and let simmer for 20-25 minutes, stirring occasionally.

Notes

Serve over your favorite gluten-free pasta!
