An easy pesto recipe with vegetables snuck in!


Ingredients

Scale

1 large zucchini, cut into large chunks
1 cup fresh basil
1 tbsp nutritional yeast
1/2 tsp kosher salt
5 tbsp extra virgin olive oil
1/2 lemon, juiced


Instructions

  1. Combine all of the ingredients in a food processor and blend until fully incorporated.

Notes

Serve with your favorite gluten-free pasta.
