Low FODMAP Strawberry Banana Popsicles

Funny story: Years ago I had scoliosis surgery (not the funny part of the story I swear) and refused to eat any of the nasty hospital food.  Our sweet family friend brought me healthy strawberry Popsicle but for whatever reason I refused to eat the chunks of strawberry.  I would spit them out into my Dad’s hand each time.  I was in so much pain that I didn’t think twice about how gross that was but what cracks me is my Dad is a bit of germaphobe and he felt that badly for me he let me do it!  Now that’s true love! 😉

I scream, you scream, we all scream for….POPSICLES.  Trust me, these are good, capital letters GOOD.  What I love the most about popsicles is that they are already perfectly portioned out to grab and go.  Plus who doesn’t love a popsicle on a hot, sticky day?!
These are packed with only fresh fruit instead of the majority of the store bought popsicles that are filled with nasty high fructose corn syrup and an overload of sugar.  Plus the “healthy” ones that you can find in the store are typically SO expensive.

  1. In a blender mix all of the ingredients until combined.
  2. Pour into popsicle molds and freeze for at least two hours.
