Vegan Chocolate Fudgsicles

Summers in Texas are hot, humid and did I mention hot?!?  There is nothing more refreshing in the summer than a freezing, cold popsicle and a pool to jump into.  I am so envious of  my high school summer days, laying on floats in the swimming pool with girlfriends and gushing about boys we had crushes on.  Nowadays when I get a full weekend day with no plans and I can escape to a swimming pool, its a huge victory! Ugh, I sound old don’t I?!

I grew up on the classic Popsicle brand, Fudgsicles.  You know the ones that come in the traditional yellow box?  Unfortunately I can’t eat those anymore but this dairy free version tastes just like the classic if not better.  Plus there are only 7 ingredients and after a quick run in the blender, you have your own popsicles ready to put in the freezer.

Back to desserts, what is your favorite cold, summer treat?
