I love Valentine’s day and it has nothing to do with having a significant other as some of my best Valentine celebrations have been celebrating with my girlfriends. Nothing against men but girls are usually more creative on this holiday… a red and pink themed potluck dinner anyone?! (yes, this really happened to one girl’s potluck!). Plus swooning over the superficial Valentine’s day items like the glittery hearts, shaped candy and decor only gets so many ooo’s and ahhh’s from most men! Show my Valentine finds to a girlfriend and that a whole other story!
Most importantly Valentine’s Day to me is about showing appreciation and love for the people in your life like your colleagues, friends, and family. We don’t tell the people in our lives enough how much we love them. As silly as it sounds but a small trinket of appreciation can make someone feel so special. So get out there, single or not and tell someone you love them! If you need help thinking of a creative and homemade Valentine treat, look no further than these chocolate covered strawberries. These strawberries are not only fun to make but are just as delicious to eat!

- Yield: 6 strawberries 1x

Ingredients
- Half a Dozen Strawberries washed and dried
- 3/4 Cup Dark Chocolate Chips
- Toppings: I used Cacao Nibs, Unsweetened Coconut Shreds & sprinkles.
Instructions
- Using a double boiler (or microwave) melt chocolate until smooth.
- Dip strawberries generously with chocolate and place on wax lined baking sheet.
- Decorate with toppings of your choice and place in refrigerator for at least 60 minutes to harden.
