Chicken Noodle Soup

There is truth to why people always suggest eating chicken soup when being sick.  Studies have shown that the “good stuff” in the soup can help clear nasal congestion and have a mild anti-inflammatory effect to ease cold symptoms.  I guess our parents were on to something when they would have us eat chicken soup as kids.  🙂 Shouldn’t everyone have the chance to enjoy chicken noodle soup, even us on the FODMAP diet? That’s why fodmap chicken recipes like this one should exist!

Recently I was homesick and made my first ever homemade chicken noodle soup.  I don’t know why I hadn’t made it before because it really was so easy!  I used rice noodles to make the soup gluten free but you can really use whatever you pasta you have on hand.

  • 1 Tablespoon Butter
  • 1/4 Cup Green Onions, diced
  • 2 Medium Carrots, peeled and sliced
  • 64 Ounce Low Sodium Chicken Broth
  • 1 Large or 2 Small Chicken Breasts, chopped into 1-inch pieces, seasoned with salt & pepper

  • 2 Tablespoons Fresh Parsley, chopped
  • 3 Tablespoons Fresh Dill, remove stem but can put in whole
