Brownies are a perfect holiday treat to make this time of year as they are not only delicious but make for great gifts to give to coworkers, family and friends. My biggest accomplishment is to make FODMAP brownies that are decadent and delicious but also safe to eat. After I made these bad boys, my mom gave me the best compliment in the world and said matter of factly: “these are your best brownies yet.” #daymade Some of you may not be a fan of pecans or candied pecans so feel free to leave out of the recipe.
I’m all about giving homemade gifts (usually in conjunction with a store bought gift) as I think it adds a personal touch. One year I made homemade vanilla extract and another year I made decorated wooden spoons to gift. You have to make sure the recipient will appreciate it otherwise it could end up straight in the trash!

What’s better than brownies? Candied pecans baked into your brownies!
Ingredients
- 1 1/2 cups raw sugar
- 1/2 cup unsalted butter, chopped into large chunks
- 1/2 tsp sea salt
- 1 tsp vanilla extract
- 3/4 cup Dutch-process cocoa
- 3 large eggs
- 3/4 cup gluten-free flour
- 1 tsp baking powder
- 1 cup chocolate chips
- 1 cup candied pecans, loosely chopped
Instructions
- Preheat the oven to 350 degrees.
- In a microwave-safe large bowl add the sugar, butter & salt and microwave at 30-second intervals until the butter has melted.
- Stir the mixture and let cool for a few minutes.
- Add the vanilla extract, cocoa, and eggs and mix until combined.
- Gently blend in the flour & baking soda followed by the chocolate chips.
- Pour the brownie mixture into an 8×8 sprayed baking pan and top with the candied pecans.
- Bake for 40 minutes or until toothpick comes out fairly clean.
