If you’re like me, you probably haven’t heard much about teff flour. l recently was introduced to teff by Claire Smith, a farmer whose family has been in the farming industry for 8 generations . Her family began growing and sells teff from their Michigan farm. This grain originated from Ethiopia and is naturally gluten free & GMO free which makes it a perfect fit for anyone following the FODMAP diet. It is a no brainer to use this grain as gluten free alternative as it’s high in protein, calcium and iron. Who knew you could make brownies with all of these positive attributes?! Do you have a favorite gluten free grain that you bake with other than teff? I would love to hear as it’s always fun experimenting! If you’re looking for another teff recipe, try out this super delicious Chocolate Teff Loaf.
