I have a major sweet tooth and finding substitutions that are still satisfying but also considered FODMAP diet desserts has been a challenge. Unfortunately, even the lactose-free ice creams sold at grocery stores can have corn syrup, gums, and other ingredients that are high in FODMAPs. Plus some of those small pints can be so expensive. This recipe is double the quantity and quality of a store-bought purchase (if I do say so myself!).
This recipe calls for coconut milk which is my new obsession. Did you know there are so many nutritional benefits of consuming coconut milk?

Description
Who says dairy-free ice cream isn’t good?!
Ingredients
- 1 Can of Full Fat Coconut Milk
- 2 Ripe Bananas
- 1/2 Cup Dark Chocolate Chips
- 1/3 Cup Chopped Walnuts or Pecans
- 1/2 tsp Pure Vanilla Extract
- 1/4 Cup Maple Syrup
Instructions
- In a large bowl, add coconut milk, bananas, vanilla extract & maple syrup.
- Using an immersion blender (or a blender) blend all of the ingredients before pouring into ice cream maker.
- Churn in ice cream maker for roughly 25 minutes.
- Add chopped nuts and chocolate chips for an additional few minutes.
- Pour ice cream mixture into freezer safe container.
