Okay, years ago before I got into the blogging/website world I had a few recipes that I was famous for and by famous I mean my friends and family asked for them over and over again. 😉 One of them being a BOMB spinach and artichoke dip that was absolutely delicious and addicting. I would always double the recipe because it was such a hit. I still make it for certain family occasions but I haven’t been able to eat it in years. It is made with lots of Parmesan cheese, cream cheese, garlic, bread crumbs, which is definitely not FODMAP friendly. With the Super Bowl around the corner, (really I could care less about the game but I do like the half time show and commercials), I wanted to create my own version that would be safe and my family and friends would still enjoy. This is the perfect recipe to include in your FODMAP appetizers recipe collection.

Description
This insanely delicious spinach dip will fool even the biggest cheese lover!
Ingredients
- 1 package frozen chopped spinach or 10 ounces fresh spinach, drained
- 2 tbsp chopped green onion
- 3/4 cup plain lactose-free sour cream
- 1/4 cup mayonnaise
- 1 teaspoon lemon juice
- 1 teaspoon sea salt & pepper
- 2 tablespoons nutritional yeast
- 1/4 cup gluten-free bread crumbs
Instructions
- Preheat the oven to 375 degrees.
- In a medium sized bowl, gently mix the ingredients together.
- Spray a 12 ounce baking dish with nonstick cooking spray and add the spinach dip to the dish.
- Bake for 20 minutes until bubbling and hot.
Notes
Serve with your favorite crackers, chips and FODMAP safe vegetables.
