Summers in Texas are hot, humid and did I mention hot?!? There is nothing more refreshing in the summer than a freezing, cold popsicle and a pool to jump into. I am so envious of my high school summer days, laying on floats in the swimming pool with girlfriends and gushing about boys we had crushes on. Nowadays when I get a full weekend day with no plans and I can escape to a swimming pool, its a huge victory! Ugh, I sound old don’t I?! Plus, I’m always looking for FODMAP diet desserts that everyone will love!
I grew up on the classic Popsicle brand, Fudgsicles. You know the ones that come in the traditional yellow box? Unfortunately, I can’t eat those anymore but this dairy-free version tastes just like the classic if not better. Plus there are only 7 ingredients and after a quick run in the blender, you have your own popsicles ready to put in the freezer.

Description
A satisfying dairy-free popsicle anytime of the year
Ingredients
- 2 Tbsp Cocoa Powder
- 1/2 Cup Full Fat Coconut Milk (shaken from the can)
- 1 Medium Size Ripe Banana
- Scant Sea Salt
- 1/2 Tsp Pure Vanilla Extract
- 1 Tbsp Maple Syrup
- Sprinkle of Cocoa Nib
Instructions
- In a blender, add all of the ingredients minus the cocoa nibs for 60 seconds.
- Pour mix into Popsicle molds (fits about 6)
- Add a sprinkle of cocoa nibs to top
- Close Popsicle molds and freeze for at least four hours
Notes
The easiest way to remove Popsicle mold is to run under hot water for a few seconds.
