If you’re like me, you probably haven’t heard much about teff flour.  l  recently was introduced to this flour by Claire Smith, a farmer whose family has been in the farming industry for 8 generations.  Her family began growing and sells teff from their Michigan farm.  This grain originated from Ethiopia and is naturally gluten-free & GMO-free which makes it a perfect fit for anyone following the FODMAP diet.  It is a no-brainer to use this grain as a gluten-free alternative as it’s high in protein, calcium, and iron.  Who knew you could make brownies with all of these positive attributes?!  If you’re wanting to read even more about this awesome grain, click here.  I can’t wait to experiment with more teff FODMAP recipes.

Teff Brownies

Description

These brownies are made with nutritious packed teff flour.  You can feel good about eating these treats!

Instructions

  1. Preheat oven to 350 degrees.
  2. In a small bowl combine flour, cocoa powder, & salt. Set aside.
  3. In a medium-size bowl mix sugars, coconut oil, vanilla & eggs. Combine dry ingredients to wet ingredients.
  4. Gently fold in the walnuts and chocolate chips.
  5. Spray an 8×8 baking dish with nonstick cooking spray and with your hands press the dough evenly into pan.
  6. Bake for 35-40 minutes or until a toothpick comes out clean.

    Do you think vegan/flax “eggs” would work? I dont do eggs well
