l have a really bold statement to make…are you ready for it?!?! l LOVE DARK CHOCOLATE ANYTHING!!!! Thank goodness dark chocolate is considered healthy and FODMAP safe because it would be really hard for me to give up. There are some strange people in this world (if you are one of them, l apologize but you probably wouldn’t be reading this recipe anyway) who say they don’t like chocolate. Even worse, some say they only like white chocolate and to those people, l would respond by informing these poor souls that white chocolate isn’t even considered as chocolate.
In our family, it’s borderline offensive to bring a dessert that doesn’t have chocolate as one of the main ingredients. On more than one occasion I have seen my Dad give a look when someone tries to pass off a vanilla dessert as “really good.” Those people aren’t fooling anyone!
What l love about these truffles are they can be made ahead of time and kept in the freezer. This is exactly what l did for the tea party thrown by Twinkie aka Katherine and myself last year. l was thrilled to find them a huge hit with the ladies as they make for the perfect bite. Plus who can pass up on FODMAP diet desserts?

Description
I love storing these in the freezer for when a chocolate craving hits!
Ingredients
- 2 Cups Unsweetened Coconut Shreds*
- 3 Tablespoons Maple Syrup
- 4 Tablespoons Coconut Oil
- 1 Teaspoon Vanilla
- Pinch of Sea Salt
- 4 Ounces Dark Chocolate Chips (vegan chocolate will work as well)
Instructions
- In a food processor pulse, the coconut until the texture becomes thick. Add the remaining ingredients (except the chocolate) and do a quick pulse to combine.
- Using your hands roll the mixture into small balls and place on a wax lined sheet. Once all the balls have been rolled refrigerate for at least thirty minutes, or until firm.
- Microwave the chocolate in a microwave-safe bowl for 20-second intervals at a time until the chocolate is fully melted.
- Using a spoon place the balls one at a time into the bowl of melted chocolate and make sure the entire ball is covered in chocolate. Place ball back on wax paper and repeat process until all the balls are completely covered in chocolate.
- Place in refrigerator to harden for at least an hour. These stay well if you make ahead of time and keep in the freezer.
Notes
*A FODMAP safe serving of dried coconut shreds is 1/4 cup. Stick to 2 truffles to be safe.
