Do you remember making old fashion rice crispy treats when you were a kid? I know I remember the traditional blue cereal box, a bag of marshmallows and melted butter. I have such fond memories of making these with my parents on the weekends. There is nothing more satisfying than a homemade batch of rice crispy treats. I have to be careful because my husband can go right through a pan of them without even blinking. I have a huge sweet tooth and thank goodness this recipe fits right into FODMAP diet desserts.
These traditional rice crispy treats were my inspiration for a similar idea but instead of marshmallows, I combined chocolate and peanut butter. You really can’t go wrong here people…am I right?

Description
There is nothing better than a good rice crispy treat!
Ingredients
- 1/2 Cup High-Quality Cocoa Powder
- 1/2 Cup Coconut Oil, melted
- 5 Tablespoons Maple Syrup
- 1 Teaspoon Pure Vanilla Extract
- 3 Tablespoons Peanut Butter or nut butter of your choice
- Pinch of Sea Salt
- 2 Cups Rice Cereal
Instructions
- In a small saucepan on low heat, melt coconut oil and cocoa powder. Add vanilla extract, sea salt, and maple syrup and stir until combined. Remove from heat.
- In a large bowl, add cereal and chocolate and mix until cereal is completely covered.
- Line a small baking dish (I used a bread pan) with parchment paper and pour in cereal mixture. Place in freezer for 20 minutes in order to harden. Cut and serve!
Notes
I keep these in the freezer as the chocolate melts pretty quickly. Be aware that vanilla extract can have added fructose like corn syrup or sugar. Make sure it is purely vanilla extract.

October 22, 2017 at 3:10 pmI’m currently following the low-fodmap diet and this is a lifesaver. But Vanilla extract can have some added fructose because some companies add corn syrup or pack the beans in sugar, so on the low-fodmap diet it has to get left out 🙁
